Bone Broth for Beginners
Chicken Soup for the Soul has apparently been more productive than I have in the past 15 years or so. Google just told me that there are 250+ Chicken Soup books out; they’re really doing a service to society with those underrepresented niches, as seen in Horse Lover’s Soul III and My Very Good, Very Bad Cat’s Soul. Thank God my parents had faith in my channeling adolensent aggressiveness into Javelin, High School Drama, and my volvo’s speakers with Dashboard Confessional because that whole Chicken Soup for the Teenage Soul was sham that usually made you feel like an ungreatful and insignificiant waste of space…+hormones, it’s like throwing a tsunami into an ocean of instability. Chicken Soup for the Unhealthy New Yorker’s Soul: Bone Broth
If you haven’t been to Hearth’s Marco Canora’s Bone Broth Stand, Brodo, yet, please add this to your bucket/go-to lists. At Brodo, his basic broths (beef, chicken, hearth [a combination of turkey, chicken and beef]) can be served plain or mixed with variety of add-in, from tumeric, to bone marrow, to yolk, to Asian condiments and even sometimes being forthed with freshly milled herbs. While the cup can be pricey, ranging from $16-$13, making the broth yourself can be a time and space commitment. I can imagine this sounds like a total hoax so let me take my Witch Doctor hat off and let’s quickly explore this voodoo.

What is bone broth?
- Bones and marrow, skin and feet, tendons and ligaments that you can’t eat directly can be boiled and then simmered over a period of days. This simmering causes the bones and ligaments to release healing compounds like collagen, proline, glycine, Omega-3s, glutamine, calcium, magnesium, phosphorus, silicon, sulphur and others. They also contain chondroitin sulfate and glucosamine, the compounds sold as pricey supplements to reduce inflammation, arthritis and joint pain
- It’s close to 50% protein by volume, and that number goes up once you factor in all the connective tissue that’s usually attached to the bones themselves. Collagen, the protein matrix in bones, tendons, ligaments, and other flexible tissues, is broken down during the cooking process into another protein called gelatin, which contains several very important “non-essential” ones, especially proline and glycine.
